Greetings from Bangkok, Thailand! I came back to visit my home town since last week just in time for the water festival along with the blistering heat. So a few days ago after desperately craving for cold drink (as a typical Indian would say), I made my self a chilled glass of Nutella chocolate milk from the hazelnuts I soaked from the previous night. Yes, you heard me right. Nutella milk – but minus all the nasties of course! It’s a raw, gluten free, dairy free, vegan & paleo friendly chocolate drink that even kids are going to love. Once you’ve soaked the hazelnuts, it’s going to take only a couple of minutes to blend everything together. Easy, icy, healthy & tasty!
1 cup raw Hazelnut kernels (soaked in water overnight, rinse before use)
2 cups Water
1 tbsp Cacao powder
2 Dates (preferably Medjool)
1/2 tsp Hazelnut butter
1/4 tsp natural Vanilla extract
1/2 tsp Mesquite powder (optional)
4-5 small Ice cubes
Additional sweetener of choice such as Agave, Maple syrup etc. (optional, according to taste)
1/2 tsp Cacao nibs
1/2 tbsp Hazelnuts (roasted)
1/4 heaping tsp Coconut Palm Sugar
Blend soaked hazelnut kernels with 2 cups of water in a blender and blend for a minute or so.
Cover a fine sieve with a cheesecloth and pour the hazelnut content front the blender through and make sure to strain all the liquid out into a bowl. It should yield approximately 1 1/2 cups of milk.
Rinse the blender well and blend together the hazelnut milk along with cacao powder, dates, hazelnut butter, vanilla extract, mesquite powder (if using), ice cubes and additional sweetener (if using) till well combined.
Pour the chocolate milk into a serving glass, using a spoon to hold back the foam from till your done pouring the milk. Then scoop the foam on top.
Grind together the ingredients for the topping in a pestle and mortar. Sprinkle them over your Nutella milk before drinking and voila!
